Casserole
| Preheat
oven to 400°. Slice 2 medium zucchini, 1 small unpeeled eggplant, 1
medium sized peeled onion, 2 large very ripe tomatoes and 1 medium
sized seeded green bell pepper as thinly as you can. Mix together in a
bowl 1t each dried thyme and basil, 2t salt, 2 minced garlic cloves,
1/4t black pepper and 1/4C chopped fresh parsley. Spray a 2 quart
casserole with non-stick spray and layer all the veggies in, sprinkling
each layer with your mixed spices. Top with 2T olive oil and bake 35
minutes. We love this with lots of cooked barley and parmesan at the table to pass. The name comes from the Nursery Rhyme: Mary, Mary, quite contrary how does your garden grow? Because at one time we grew most of these veggies in our own garden!
