Casserole



1 Lb ground beef
1 Can black beans, drained -
1 Cup raw brown rice
2 Tsp taco seasoning
1 Can of diced tomatoes, drained (note: you could substitute sals)
1 - 2 cups shredded cheddar cheese
sour cream

Cook the ground beef with 1 tsp. taco seasoning until brown.
Cook the brown rice with 2 cups water and 1 tsp. taco seasoning a couple tablespoons butter (gives it better flavor). I heat the rice and water to boiling, with the lid on, then turn down to medium and cook about 35 minutes.
Dump the rice in the bottom of a casserole dish, dump the beef on top, dump the beans on top of that, then the diced tomatoes, then the cheese. Bake at 350 for about 20-25 minutes. I sometimes serve this over or with tortilla chips, and top with a spoonful of sourcream.

note: I have to use diced tomatoes cause dh is *supposedly* allergic to onions, which salsa has in it. I think this would be much better with salsa though. Also, someday I want to try this with Nacho Cheese soup in place of the plain cheddar cheese, but my Walmart doesn't carry it.
