Casserole
| Make a lot of rice and mix in a cream of something soup to make it creamy but not soppy. Add salt and pepper here. spray some non-stick stuff in a deep baking pan or casserole dish steam some broccoli....and chop layer rice, broccoli, generous layer grated cheese of choice (cheddar would be my choice) and rice mixture again... repeat layering until the pan is full, end with cheese layer. bake at 350 till it is hot through and through. I
think I would bake it covered for most of the time to keep it moist and
then the last few minutes take the cover of to melt cheese evenly on
top. It will work. It has been years since I have made anything like it
but it should be fine. Now some nice varities: add cooked ground beef, chicken or ham instead of broccoli and call it a main dish. For
a mexcian variation: Use cheddar soup with the rice, layer tomatoes,
onions, chilis and ground beef seasoned with taco seasoning. Top with

here is my variation and I love it. Buy a package of chopped frozen
brocolli, can of Campbells cheddar cheese soup and a can of chunky ham.
put the brocolli in a covered dish and heat in the microwave until
thawed. add the cheese soup the chunky ham (already smashed up into
smaller pieces) ane a cup of cooked rice. bake at 350* for about 15-20
minutes. I never time it just when you look at it and it is bubbling on
top and looks done. This is easy and very good.
